Frozen Blueberry Coconut Yogurt Pie

I came across this recipe that only requires 4 ingredients to make a cream pie and no baking is required. It seems fairly healthy with Greek Yogurt as its main ingredient, why not give it a try?

Here are the 4 ingredients:
toasted coconut, vanilla greek yogurt, fresh blueberries, graham cracker crust.
(I had accidently got Plain Greek Yogurt instead, so I changed the recipe a little bit)
 
 
I toasted the coconut in the oven at 350 for about 10 min, but keep a close watch as it tends to burn easily.

Then you start mixing your yogurt with the toasted coconuts. Here is where I changed the recipe a little bit. I start out with some heavy whipping cream and added some vanilla extract. Once you have the whipped cream done, save a little bit of it to top off on your pie later when serving.
 
I mixed the remaining whipped cream (about 1 cup) with 2 cups of Greek Yogurt in the mixer, then I added the toasted coconuts. Then pour into the graham cracker pie crust.
 
 
Freeze for at least 6 hours, thaw and decorate before serving.
 
Doesn't that make you droll?
The pie turned out really well, I saved some toasted coconuts and sprinkled it on before serving along with the whipped cream. This healthy dessert is only 300 calories for 1/8 of a pie (well I'm sure the whipped cream I used added on some extra calories there, but it was worth it)

Next time I would try not to toast the coconut in the pie mixture and only use toasted coconut on top for that crunch. It seems to have too much texture this time.

Ah.. Yelp.. you have disappointed me.
 
We were looking for a place to go for breakfast and I came upon reading about this place, Our Families Coutry Cafe. Reviewers have all said it's a great place for midwest home style breakfast and hearty food. Hubby is a fan of country food like biscuits and gravy & country fried steaks.
 
This place is in the middle of nowhere by a bunch of new housing developments. Driving there made me wonder if I was going to the right place because it's all residential areas.
 
The place is homey. The servers are nice and efficient.
However, the food is a bit dissapointing.
It was bland and under-seasoned.
The meats were burnt and salty.
The gravy tasted like it's powdered from a package and not homemade. It said it was a sausage gravy but I have yet to find some sausage pieces in the gravy itself.
Just not a very consistant standards across all the items.
 
Our total bill for 2 breakfast entrees and 2 ice teas with tax came to $28.
For couple dollars more we could've gotten much better and bigger food from Hash House A Go Go...

ROTM: recent eats & drinks 吃吃喝喝

I haven't been posting here for a while, I know.  Having a baby will consume ALL your time. You use whatever spare time you have to clean, cook, eat, relax, and most important, sleep! We finally have some chances to go out to eat and take Zoey out with us now that's she's a little older and easier to bring around. So I just want to make a quick post about some of the places we've been to in the past couple months.

I had German food when I went to visit my brother's family couple years ago in Germany. It was really good but different. This restaurant is a exact replica of the legendary one in Munich, Germany, so I thought we go try it here in Vegas. The atmosphere is fun, it's a traditonal beer hall with wooden tables and benches and with live entertainment in the evenings.
 
The beer was excellent, which are all imported from Germany.
The food, however, is good but very bland.
The service was very good and efficient.
 
This would be a great place to come to drink and have fun. Not so much for the food though in my opinion.

I have never tried Indian food. Don't know why, just never had the interest.
We've been watching these cooking shows lately and one of them is about exploring India and the food. It looked pretty delicious. We found this restaurant near us and has pretty good reviews so we decide to give it a try.
 
The decoration is very nice and the resturant is clean.
We went on a weekday lunch time so there were couple tables here for the lunch specials. Which is what we end up getting. The lunch specials come with soup and nan bread, for $9.95. We both ordered the lunch special with 3 items so we could try a little bit of everything.
 
The special I got was all vegetarian, being a meat connisseur myself, I wasn't sure if I would like it. But surprisingly, all the vegetable dishes were really flavorful and did not made me miss meat for the moment.  It tasted very healthy for sure.
 
 



Complimentary soup - taste like some kind of squash, lentil and tumeric.


Lunch Six - Chicken Tikka Masala, Tandoori Chicken and Dewane Handi (pureed spinach mix veg blend)



Lunch Seven - Channa Masala (garbanzo beans, tomatos, roasted cumin), Vegetable Basil Curry,
and Aloo Bhaji (roasted potato, fresh curry leaf)
 
A yoguart dip for the nan bread, I forgot the name. Very tangy and refreshing.
Dessert: a fried cheese donut hole with rosewater syrup served warm. This was very good!
